Rebeccah May is the home of exquisite cakes and confectionery by design. A fully qualified Patisserie & Confectionery chef Rebeccah started her business in January 2009 creating handmade cakes, sweet treats and chocolates for all occasions. Her kitchen motto is ‘everything must taste as good as it looks’ and this in part is achieved by using the rich local Jersey dairy produce.
Wedding cakes to birthday cakes, anniversary cakes to christening cakes and every cake, brownie, biscuit and sweet treat in between, each finished product from a simple cupcake to a complex wedding cake is presented as a work of delicious food art. Rebeccah’s products are available as bespoke creations and she has a prêt a porter range of products available from her online cake shop via the website.
After a life changing event in 2007 I decided it was time to leave a successful retail HR career and retrain as a Patisserie & Confectionery chef. I was fortunate to get a place at Brooklands college where I gained my chef qualifications in sugarcraft, wired flowers, P&C and bakery.
I opened my business in London in January 2009 and it started to grow quickly, so I opened an online cake shop in December 2010 which saw Christmas cakes packaged up to go all over the UK. Whilst I was in the kitchen my husband went and got a job here in Jersey and this year saw the full relocation of the London kitchen (which took one large removal van load alone…)
Coming to Jersey has given me an amazing opportunity to focus on the use of Jersey dairy produce in all my cakes and sweet treats, I immediately noticed a real difference in baking results and flavour profile. So I sought GJ accreditation and product development projects are underway to incorporate other Jersey produce into the product range.
I make food that is an edible work of art, from the most simple cupcake to the most complex wedding cake, every time something comes out of the oven to be decorated it’s an opportunity to get creative! I love the inspiration offered every day by the natural beauty of Jersey and I’ve created some wedding cake designs which will be showcased in the new year with design influences inspired by the island.
I create bespoke cakes for all events from towering wedding cakes to cupcake towers, from birthday cakes for children to complex birthday designs for grown ups, christening cakes, wedding anniversary cakes…every occasion can be celebrated with cake and it’s a happy world in which I work.
The kitchens here are always warm with the smells of vanilla, chocolate, roasting nuts, ground spice…nasty additives or palm oil don’t feature in this kitchen, everything is as natural and delicious as possible.
I offer a design and tasting service for people wanting large scale cakes commissioned, where you come and taste a range of cake flavours and out come the tear sheets, magazines, books, ribbons, boards, cake stands etc until we hae created and drawn up your perfect cake. All this with a sea view!
The online cake shop celebrates it’s 2nd Christmas this year and the first Christmas orders were placed in August! The range will be expanded over the coming year to stock as many different Jersey based cake and sweet treat bakes as possible.
